Freezing here today, I kept busy in the kitchen and made sausage rolls, gooseberry pie( still lots of g.gogs in freezer to use before June) a flan case for later in the week and tomato soup. This is my yummy recipe for tom soup; soften one finely chopped onion and a large grated carrot in a little butter add a bit of water after a few minutes to cook the veg without burning, cook till soft. Add a little flour and some tomato paste, crumble in a veg stock cube add cook for a couple of minutes, pour in a little boiling water stir well so as not to get lumps. Add a tin of tomatoes and leave to cool for a few minutes then whizz in the liquidiser. Pour back into saucepan and add more water till its soup consistency, add teaspoon of sugar, salt and pepper to taste.
